Ingredients

½ red onion, peeled and sliced
Juice of ½ lime
1 pinch salt
1 tsp olive oil
130g beef mince
2 tsp fajita seasoning
2 taco shells
15g feta
65g avocado, roughly chopped
40g cherry tomatoes
½ small bunch coriander, roughly chopped
Total time: 20 minutes
Method
Mix the onion with the lime juice and a pinch of salt then set to one side to pickle.
Heat the oil in a frying pan over a medium to high heat, fry the mince for a few minutes then add the fajita seasoning. Add a splash of water and give everything a good stir. Continue cooking until the mince is hot through.
Fill the taco shells with the mince, feta, avocado and tomatoes then serve with the onions and some coriander (optional).
