Ingredients
Serves 3
2 tsp olive oil
300g skinless chicken breast
Salt and pepper
1 red onion, peeled and chopped
1 red pepper, deseeded and sliced
1 courgette, diced
½ red chilli, sliced
2 cloves garlic, peeled and crushed
600g tinned chopped tomatoes
160g dried orzo pasta
150ml water
1 small bunch basil, leaves torn
30g parmesan or hard cheese, grated
Total time: 30 minutes
Method
Heat half of the oil in a large saucepan, season the chicken with salt and pepper then fry in batches until golden brown. Remove from the pan and set aside.
Heat the remaining oil, add the onion, pepper, courgette and chilli and fry for 5 minutes until soft. Add the garlic, fry for a minute then add the tomatoes. Stir in the chicken, orzo and the water, cover then simmer for 10 minutes until the orzo is cooked.
Remove from the heat, stir in the basil and serve with parmesan.
