Spring Roll Bowl

Ingredients

Serves 1

2 tsp olive oil

130g pork mince

½ tsp ginger puree

1 clove garlic, peeled and crushed

80g mushrooms, sliced

80g white cabbage, shredded

1 carrot, peeled and grated

1 tbsp soy sauce

80g cooked rice noodles

1 spring onion, sliced

Salt and pepper

Total time: 20 minutes

Method

Heat the olive oil in a frying pan over a medium to high heat and cook the mince with the ginger and garlic for a few minutes. Add in the mushrooms, cabbage and carrots. Cook everything together for around 10 minutes then stir in the soy sauce before seasoning to taste.

Serve on top of the rice noodles and scatter over the sliced spring onion.
